If you’re like me, you’re always on the lookout for easy recipes that also must be low-fat, healthy recipes. I’ve found some Thanksgiving recipes that are both easy and healthy with low-fat ingredients. I’m adding them to my Thanksgiving menu so I’ll be able to spend less time in the kitchen, more time with our grandchildren and children…and be able to keep within my Weight Watchers points, too. Since I’m back on Weight Watchers as a returning lifetime member, my easy Thanksgiving recipes must be low-fat; but I won’t settle for those that don’t offer the delicious flavors we associate with Thanksgiving dinner.
Pumpkin Mousse Recipe
This Thanksgiving recipe for Pumpkin Mousse from Kraftfoods.com is not only easy but it’s also low fat and sugar free. An added bonus is that it fits any budget with its low cost. This tasty pumpkin recipe serves twelve 1/2 cup servings and has only 60 calories, 1g of fat, 1g of fiber, and 12g of carbs (1 pt). Serve this delicious Thanksgiving recipe that takes only 15 minutes to prepare and one hour to chill in wine glasses for an elegant, festive holiday presentation.
Makes:
12 servings, 1/2 cup each
What You Need:
3 cups cold fat-free milk
2 pkg. (1.5 oz. each) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding
1 can (15 oz.) pumpkin
1 tsp. pumpkin pie spice
1 cup thawed COOL WHIP LITE or COOL WHIP Sugar Free Whipped Topping
Make It
BEAT milk and pudding mix in medium bowl with whisk 2 min. Blend in pumpkin and spice.
STIR in COOL WHIP.
REFRIGERATE 1 hour.
